Well, I love groundnut soup served with plain rice.

Others do prefer groundnut soup with rice balls (omu tuo), fufu, ampesi, akple and banku.

Groundnut soup is a popular Ghanaian soup enjoyed by all tribes of Ghana.

It is also well enjoyed by some countries in West Africa such as Nigeria and Togo.

In this recipe post, we are going to give you a complete step by step guide on how to prepare groundnut soup, the Ghanaian way.

 

Ingredients to prepare groundnut soup

  • 1 cup of groundnut paste
  • 4 medium-sized onion
  • 4 medium-sized tomatoes
  • 4 teaspoon of tomato paste]
  • 1 pound of meat (chicken, beef or fish)
  • 2 litres of water
  • Salt
  • 5 pieces of red pepper
  • Spices (maggi cube)

 

Groundnut soup preparation instructions

Now let’s have a look of the step by step guide on how to prepare groundnut soup.

  1. Wash meat thoroughly, chop and place into a clean cooking pot
  2. Add seasonings and mixture with your hands thoroughly.
  3. Place over low heat and allow to steam for about 10 minutes
  4. Turn the steaming mixture from time to time.
  5. Pour the groundnut paste into a clean bowl and add little amount of water. Mix with your hands and ensure you obtain a uniform consistency. Add more paste of you want a thicker mixture.
  6. Add the groundnut paste mixture to the steaming pot and stir.
  7. Simmer for about 5 – 10 minutes.
  8. Wash onions and fresh tomatoes and add to the mixture
  9. Once the tomato and onions have boiled for a while, remove them and blend.
  10. Pour the blended content back into the stock.
  11. Stir thoroughly
  12. Allow to cook for 8 minutes
  13. Add salt to taste .

Things to note

Groundnut soup in Ghana can be done in several ways. Some cooks prefer to add kontomire to the mixture.

Some prefer to use goat meat or even smoked fish.
