Fish Stew Recipe

Fish stew is a quick, easy, and  delicious stew made with fresh fish fillets cooked in a tomato sauce. You can substitute with any fish of choice to enjoy a hearty meal.

 

Ingredients for Fish Stew Recipe

2 lbs Tilapia filets

2 teaspoons salt

1 cup flour

1/4 teaspoon black pepper

juice of one lime

Cooking oil

1 large finely chopped onion

6 cloves crushed garlic

1/2 teaspoon crushed ginger

10 sprigs thyme

1 bay leaf

1/2 seedless scotch bonnet pepper

2 vegetable bouillons

2 cups chopped tomatoes

2 tesspoons ketchup

2  finely chopped scallion

2 ½ cups water

 

Steps in making Fish Stew Recipe

Pour juice of 1 lime over tilapia filets in a large bowl, add 1 teaspoon of salt.  Allow to sit for 20 minutes, and then rinse will cool water.

Place flour, 1 teaspoon salt and black pepper then stir to combine in a large bowl.

Pour oil into skillet to deep fry the fish. Dredge fish with flour on both sides make then shake off  excess.  Place into hot oil and fry until golden brown and crispy. Set aside.

Pour 3 teaspoons canola oil in pan over medium heat. Add onion and sautée until soft, about 5 minutes. Stir in garlic, ginger, scotch bonnet pepper, thyme and bay leaf and cook for about 1 minute.

Add tomato and cook for 10 minutes or until tomatoes begin to soften. Add water, vegetable bouillons and ketchup and bring to a boil.

Lower heat to simmer and allow to cook for 15 minutes. Add fried fish when sauce has thickened.

Turn the heat down to low and cover the pot. Cook for 3-5 minutes without stirring. Then remove from heat and garnish with chopped scallion.

Serve over hot rice or and food of choice
