Ingredients for Cornmeal Pudding Recipe
4 ounce butter
2 cup Coconut Milk
4 cups whole milk
3/4- 1cup brown sugar
1 cup white sugar
3 teaspoons nutmeg, cinnamon and all spice
3 cups cornmeal
1/2 cup all purpose flour
1 1/2 teaspoon salt
1 cup water
2 teaspoons vanilla essence
1/2 cup raisins
Steps in making Cornmeal Pudding Recipe
Preheat oven to 350 degrees F.
Grease a 10- inch baking pan and set aside.
Combine together butter, coconut milk, milk, sugar, spices, and salt in a saucepan then bring to a boil. Remove milk mixture from heat.
Combine cornmeal, flour and salt in a large bowl then add a cup of water and stir. Add vanilla. Scoop out some milk mixture and add to the cornmeal mixture about a cup at a time until mixture is smooth
Slowly whisk in cornmeal mixture to the saucepan, a little at a time while stirring with a whisk to prevent any lumps.
Return cornmeal mixture to the saucepan. Bring to boil and simmer stirring frequently- for about 6-8 minutes, to prevent lumps.
Transfer from heat add about 1/2 cup raisins
Pour or scoop out mixture into the prepared baking pan. Bake for about 60 minutes or a toothpick inserted turns out clean.
