Chicken Cauliflower Fried Rice

1 medium head cauliflower
3 teaspoons canola oil
2 large lightly beaten eggs
3 cloves minced garlic
1 fresh grated ginger
1 cup frozen mixed peas and carrots
1/4 cup thinly sliced scallions
1/4 cup plus 2 tablespoons soy sauce
2 tablespoons sesame oil
2 cooked diced chicken breasts
Hot sauce or ketchup
Remove stem from cauliflower and cut into chunks.
Blend cauliflower in a food processor until coarse in texture.
Pour 1 teaspoon of canola oil into a large skillet over medium-high heat. Add eggs and scramble.
Pour and transfer scramble eggs into a bowl and set aside.
Heat the remaining 2 teaspoons canola oil. Add the garlic and ginger and cook, stir continuously for about 1 minute.
Add the peas and carrots, scallions and blended cauliflower.
stir vegetables until tender for about 6 minutes
whisk soY sauce and sesame oil together in a bowl
Add the sauce and cooked chicken into cauliflower mixture
Cook for 3 mins. stir in scramble egg into mixture
