How to Prepare Chicken Breasts Stuffed with Crabmeat

Ingredients for chicken breast stuffed with crabmeat recipe
4 skinless, boneless chicken breasts
3 ounces softened cream cheese
2 tablespoons minced onion
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh dill
1 teaspoon minced garlic
1/8 teaspoon lemon pepper
4 ounces fresh Dungeness crabmeat
1 cup all-purpose flour
2 beaten eggs
3 cups fresh bread crumbs
2 tablespoons butter
2 tablespoons vegetable oil
Combine cream cheese, onion, parsley, dill, garlic and lemon pepper in a bowl.
Add crabmeat and mix well. Season with salt and pepper. Cover and chill in refrigerator for 2 hours.
Cut chicken breast in horizontal half through the center of each chicken and creat a pocket.
Fill each pocket with 1/4 of the crab stuffing. Dip each chicken piece into flour, eggs and bread crumbs to coat.
Melt butter with oil over medium heat in a large skillet.
Add filled coated chicken breast halves to skillet. Fry until golden brown and cooked through about 15 minutes each side.
Remove from skillet. Then drain on paper towels and serve warm. Yum
