INGREDIENTS for Cherry Cola Slab Pie Recipe
2 1/2 cups all purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1 cup unsalted Cold butter
6 tablespoons ice water
4 cups fresh cherries, pitted and halved
8 ounces cola
1/2 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon salt
1 egg + 1 tablespoon water
1 tablespoon raw sugar
Whisk together flour, sugar, and salt. Add cold butter into the flour mixture until coarse crumbles form.
Add 4 tablespoons of cold water and stir to combine. Add one more tablespoon and then one more as needed to make dough.
Divide it into thirds. Smash 2/3 into one big ball and 1/3 into one little ball. Wrap them in plastic and let them chill for at least an hour or overnight.
Wash cherries and put them in a bowl. Pour cola over them and refrigerate for at least 45 minutes.
Preheat your oven to 425F.
Roll out the large ball of dough on a lightly floured surface into a rectangle and fit it into a 13 X 9″ ungreased baking sheet with a lip around the edge.
Drain the cherries from Cola and reserve the cola in a small saucepan. Set aside.
Combine the cherries with the sugar, cornstarch, and salt. Pour filling over the crust and spread it out.
Roll out the small ball of dough and cut out as many shapes as you can. Place them over the top, overlapping.
Whisk together egg and a tablespoon of water and brush all the pie crust across the top and the edges.
Sprinkle with turbinado sugar and bake for 25 – 30 mins until crust is golden and the filling has thickened.
Put pan over medium high heat with the reserved cherry flavored cola.
Allow it to cook and simmer for about 15 minute until it thickens into a syrup.
Drizzle the syrup over crust top. Serve.
