Cheesy Fiesta Beef Casserole Recipe

Cheesy Fiesta Beef Casserole

You can make this amazing dinner for Thanksgiving and trust me you will love every bit of the cheesy taste.

 

Ingredients

1 pound ground beef

1 medium chopped onion

1 can rinsed and drained black beans

1 cup picante sauce

1/2 teaspoon chili powder

1 can reduced-sodium condensed cream of chicken soup, undiluted

1 can diced tomatoes undrained

1 can chopped green chiles

1 package crushed plain tortilla chips

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

Cubed avocado and sour cream(optional)

 

Steps

Preheat oven to 350 degrees

Cook beef and onion over medium heat in a large skillet for about 8 minutes, break up beef into pieces.

Drain and stir in beans, picante sauce and chili powder.

Combine soup, tomatoes and green chiles  in a bowl.

Lay half the chips, beef mixture, soup mixture and cheeses in a lightly greased 2-1/2-qt. baking dish.Repeat layers.

Place in oven ,uncovered, until heated through and cheese is melted, about 12 minutes.

Add avocado and sour cream as toppings if preferred
