  • 500 grams boneless chicken
  • butter
  • onion, finely chopped
  • 3 cloves garlic
  • ginger, grated
  • Cape Malay curry powder
  • green chili peppers
  • ground cumin
  • ground coriander
  • turmeric powder
  • paprika
  • tomato puree
  • coconut milk
  • fresh cilantro leaves, chopped
  • Salt, to taste
  • Cooking oil, for frying


  • Heat cooking oil in a large skillet or frying pan over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the pan and set aside.
  • In the same pan, melt the butter over medium heat. Add the chopped onion, minced garlic, grated ginger, and chopped green chili peppers. Sauté until the onions are soft and translucent.
  • Add the Cape Malay curry powder, ground cumin, ground coriander, turmeric powder, and paprika to the pan. Stir well to coat the onions and spices.
  • Pour in the tomato puree and coconut milk. Stir to combine the ingredients and bring the sauce to a simmer. Allow it to cook for about 10 minutes, stirring occasionally.
  • Return the cooked chicken to the pan and stir it into the sauce. Simmer for an additional 10 minutes to allow the flavors to meld together. If the sauce thickens too much, you can add a splash of water to adjust the consistency.
  • Taste the sauce and season with salt according to your preference.
    Once the Cape Malay Butter Chicken is cooked and the flavors have developed, remove it from the heat.
  • Garnish with freshly chopped cilantro leaves.
