Butter Pecan Layer cake
Enjoy a bit of this amazing cake. This is good for homecoming
2 cups chopped pecans
1 cup softened butter
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk

Combine pecans and 1/4 cup butter in a baking pan.
Stir and bake at 350°C until toasted. Set aside.
Cream sugar and remaining butter until light and fluffy in a large bowl.
Add 1 egg at a time and beat well. Then add in vanilla.
Combine the flour, baking powder and salt.
Add flour mixture to the creamed mixture alternately with milk. Stir in 1-1/3 cups of toasted pecans.
Pour into 3 greased and floured 9-in. round baking pans.
Bake at 350° until a toothpick inserted in center comes out clean.
Cool for 10 minutes before removing from pans to wire racks to cool completely.
