Ingredients for Banana Pancake Recipe
2 medium bananas
1/4 cups brown sugar
1 1/4 cups low fat buttermilk
1/4 cup vegetable or canola oil
1 3/4 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoons salt
1 teaspoon cinnamon
1 cup chopped walnuts(optional)
Steps in making Banana Pancake Recipe
Peel and cut bananas into pieces, pour into a mixing bowl then mash them with a fork. Whisk in eggs, oil, brown sugar, and buttermilk until smooth.
Add flour, baking powder, baking soda, cinnamon, and salt. Mix in some chopped walnuts. Allow the batter sit on the counter for about 15 minutes.
Preheat the pan. Cook the pancakes on medium to medium-low heat.
Add 1 teaspoon of oil. Add a dollop of pancake batter to the hot pan and let it cook on that side until you start to see little bubbles appear over the top.
Flip to the other side and cook for 2 minutes until golden. Repeat process
Remove from fire and serve with butter or syrup as toppings
